Today's recipe is perfect way to make use of your beautiful lavender flowers that are in full bloom at the moment. Lavender ice-cream is beautiful served with a warm apple tart.

- 10 Egg yolks
- 100g Caster sugar
- 100ml Honey
- 1 litre Cream
- 5 Organic lavender flowers
- 1 Vanilla bean

10 egg yolks
100g castor sugar
100ml honey
1 litre cream
5 organic lavender flowers
1 vanilla bean
Bring cream vanilla and lavender to simmer in a heavy based saucepan.
Whisk egg yolk sugar and honey until light and foamy.
Pour in warm cream mixture.
Return to saucepan and cook over low heat until mixture thickens and coats the back of wooden spoon.
Strain and cool.
Churn mixture in ice-cream machine to manufacturer’s directions.
